Escalibada con queso de cabra
Esta receta de escalibada la probé hace tiempo en un bar de tapas de Barcelona, me gustó tanto que enseguida me compre los moldes e hice mi versión del plato.
Desde entonces es uno de mis platos favoritos cuando tengo invitados. Queda muy vistoso y está riquísimo!!
Además, la escalibada se puede hacer el día antes y guardarla, lo que lo convierte en un plato nada complicado el día que se ha de servir.
INGREDIENTES por persona:
– 1 rodaja de queso de cabra (Rulo)
– 1 Berenjena (1/2 si es grande)
– 1 Pimiento (1/2 si es grande)
– Aceite de oliva virgen
– Pasta de olivas negras (Olivada)
REALIZACIÓN:
Asar en el horno a 180º las berenjenas y los pimientos durante aprox. 75 min. (Depende del horno)
Cuando se han enfriado sacar la piel y las pepitas y separa en tiras.
Poner los moldes en una bandeja y rellenarlos con 1 piso de berenjena, otro de pimiento y cubrir con el queso.
Meter en el horno con el grill encendido y dejar que el queso se dore un poco.
Desmoldar en el plato y decorar con una vinagreta de aceite y olivada.
Servir recien sacado del horno.
