Pulpitos con cebolla y tomate
Esta receta es del libro “Cocina catalana y mediterranea”, y no es la primera que pongo en el blog ni será la última, pues todas las recetas del libro salen geniales.
La única pega de esta receta es limpiar los pulpitos, cosa bastante entretenida, pero por lo demás es muy fácil y quedan más que buenos.
INGREDIENTES:
– 1 Kl de pulpitos
– 2 Cebollas
– 400 Gr. de tomates
– 4 dientes de ajo
– 1 Vasito de vino blanco seco
– 1.5 Cl de aceite de oliva
– Sal, pimienta y perejil
REALIZACIÓN:
Limpiar los pulpitos sacándoles la tripa, los ojos y la boca.
Pelar las cebollas y cortarlas fina
Escaldar los tomates y pelarlos. Cortarlos en trozos pequeños
Pelar y cortar los ajos en laminas finas
Poner a calentar el aceite en una cazuela de hierro o barro, poner los pulpitos y demás ingredientes en crudo.
Rociar con el vino, tapar y dejar cocer a fuego suave.
Veréis que los pulpitos dejar ir bastante agua, dejar cocer hasta que el agua se haya reducido y quede solo el aceite.
Este proceso puede tardar una hora larga.
Salpimentar y dejar sofreír un poco más.
Por último espolvorear con el perejil cortado pequeñito.
Servir caliente en la misma cazuela.
