Bonito con salsa de tomate
La mayoría de las veces cuando me pongo a escribir una receta para el blog lo que más difícil me resulta es poner las cantidades de los ingredientes, ya que esas recetas que has hecho en casa desde siempre pués, simplemente…. Se hacen! Y se hacen a ojo, sin pesar ni medir. Pero salen buenas por que los ingredientes son buenos y las haces con ganas de que salgan bien.
Esta es una de esas recetas. Así que hoy no pondré cantidades, todo a ojo!
Solo una condición: Hacerla, como hago yo, cuando veáis un bonito en la pescadería que os pide que lo compréis y lo cocinéis (seguro que me entendéis….)
INGREDIENTES para unas 4/6 personas (Depende del bonito):
– 1 Bonito entero
– 1 Lata de tomate al natural triturado (O tomates frescos)
– Cebolla
– Aceite de oliva
– Harina
– 1 hoja de laurel
– 1 Vaso de vino blanco
– Sal y pimienta
– 1 cucharada de azúcar
REALIZACIÓN:
Al comprar el bonito pedir al pescatero/a que os lo corte en dos lomos, sin espina ni cabeza. Luego cortar los lomos al tamaño que os guste u os convenga.
En una cazuela o sartén poner a calentar aceite suficiente para dorar la cebolla cortada fina.
Cuando esté dorada añadir el tomate y la hoja de laurel y freír. A media cocción poner sal, pimienta y el azúcar.
Salpimentar el bonito y pasarlo por harina. En una sartén aparte, freír muy poco (lo justo para sellarlo) Esto es muy importante, pues si nos pasamos luego quedará seco.
Cuando tengamos la salsa hecha ponemos el bonito y el vaso de vino blanco. Dejamos cocer unos 10 min. y listo
Acompañar de arroz blanco.
